Description
Pinot Noir is picked at 13.8 Baume. Two clones of Pinot Noir are grown on our Mornington Peninsula vineyard, MV6 60% and 115 40%. Care in the vineyard is matched in the winery with grapes being fermented slowly with extended grape skin contact. The winery works day and night, hand plunging the cap of skins back into the fermenting juice. The colour deepens, the perfume rises, and juice becomes wine, made fine and strong with tannins slowly extracted from the skins. The wine is matured in selected French barriques for 15 months , 15% of the oak being new. The wine is hand bottled with minimal filtration, ready to be enjoyed. This Pinot Noir punches well above its weight. Intense varietal characters of berry and forest floor. Round palate balanced with fine, almost creamy tannin finish.
